Non-Veg • Chicken

Chicken Changezi

⏱ Total: ~1 hr 15 min 🍽 Serves 4 🔥 Medium spice

🥣 For Marination

  • 🍗 Chicken – 1 kg
  • 🥛 Dahi – 1 cup
  • 🟡 Haldi – ½ tsp
  • 🌶 Lal mirch – 1 tsp
  • 🧄 Ginger-garlic paste – 1 tbsp
  • 🧂 Namak – to taste
  • 🍋 Lemon juice – 1 tbsp
  • 🌿 Jeera powder – ½ tsp
  • 🌿 Dhania powder – 1 tbsp

🫕 For Base Gravy

  • 🫚 Oil – 3 tbsp
  • 🧈 Butter – 2 tbsp
  • 🧅 Pyaz – 3 medium (sliced)
  • 🍅 Tomato – 4 medium
  • 🧄 Garlic – 10–15 cloves
  • 🫚 Ginger – 2 inch
  • 🌶 Kashmiri red chilli – 1 tbsp

✨ For Final Masala

  • 🫚 Oil – 2 tbsp
  • 🧈 Butter – 1 tbsp
  • 🍃 Bay leaf – 2
  • 🌿 Cinnamon – 2 sticks
  • 💚 Green cardamom – 2
  • 🌿 Cumin – ½ tsp
  • 🥛 Fresh cream – 3 tbsp
  • 🌿 Kasuri methi – 1 tsp
  • 🧅 Chopped onion & green chilli – ½ cup

👩‍🍳 Step-by-Step Method

Marinate Chicken
Mix chicken with curd, ginger-garlic paste, turmeric, chilli powder, salt and lemon juice. Cover and rest for at least 30 minutes.

Prepare Onion-Tomato Base
Heat oil and butter. Add bay leaf, cardamom, cinnamon and cumin. Add onions and cook until golden. Add ginger-garlic paste and tomatoes. Cook until soft then grind into smooth paste.

Cook the Chicken
In the same pan add a little oil. Add marinated chicken and cook on medium flame for 6–8 minutes until chicken changes colour.

Add Gravy
Pour the onion-tomato paste into chicken. Add coriander powder, Kashmiri chilli, jeera powder and salt. Cook until oil separates. Add warm water for desired consistency.

Restaurant-Style Finish
Add fresh cream. Crush kasuri methi between palms and add. Sprinkle garam masala. Simmer 3–4 minutes on low flame. Garnish with coriander and cream.

👩‍🍳 Neelu's Tip: Lightly fry or roast the marinated chicken before adding to gravy for smoky flavour, better texture and richer taste. Always cook gravy until oil separates — this is the secret to deep colour and flavour!
